BASIC FUNCTIONS AND RESPONSIBILITIES:
Leads and supervises Archery and Tomahawk classes for guests. Promotes guest participation in House and private classes and socializations amongst fellow guests to maximize guest enjoyment during their visit to Mohonk Mountain House and its environment. Ensures a safe range at all times.
ESSENTIAL JOB FUNCTIONS:
Lead Archery and Tomahawk activities to ensure social interaction amongst the guests and to ensure safe environment for participant enjoyment.
- Provide clear safety signals and range commands to all participants; provide orientation in advance of activity.
- Assist with the repair, care, and cleaning of all equipment and maintenance of current inventories.
- Inspect equipment for damage and ensure damaged equipment is not used until it has been repaired or disposed of.
- Prepare materials and supplies for each activity.
- Ensure safety the number one priority when conducting a class at the Archery range.
- Fill in the areas of Activities when class cancellations happens and assist in leading in house activities such as Bingo, Trivia, Scavenger hunts, and more.
- Demonstrate comfortableness with lake ecology such as: inability to see the bottom of 60’ deep, snakes, frogs, turtles, and fish in size of approximately 11-20 inches.
- Use a PC to process payment and implementation of data into a software program
- Handle adversity, change and emergency situations calmly and with a level head.
- Analyze problems and develop and implement action plans to address problems.
- Speak clearly and effectively to groups of 1-40 people.
- Demonstrate patience with children (age 7-17) and adults.
- Supervise up to 12 children per activity.
- See close vision, distance vision, peripheral vision, depth perception, and ability to adjust focus.
- Identify safety hazards and inspect the work of others by sight, sound, and/or smell. Ensure hazards are corrected.
- Speak, read and write the English language and communicate in a clear and congenial manner, with our guests, visitors and employees. Hear oral/auditory directions, instructions or warnings and give same warnings to others.
- Work in a manner that will not endanger self or others.
- Manipulate sports equipment, including but not limited to tomahawks, bows, arrows.
- Memorize history tour of the grounds, trails, and story of Mohonk and the Smiley Family.
- Demonstrate creativity in recreational activities to enhance the guest experience.
- Demonstrate good disciplinary and interpersonal skills.
- Work productively and efficiently with or without supervision when performing routine tasks.Work in a manner that will not endanger self or others.
- Work flexible or changing days and hours; including days, weekends, holidays, and occasionally up to 14 hours per shift.
- Reach with hands and arms, bend, kneel, stoop, twist and flex arms, walk up and down stairs/inclines, sit, climb up/down ladders or stand for up to 5 hours at a time.
- Lift up to 75 pounds from ground level to waist level and carry a distance of up to 100 feet with/ without assistance. Walk up to 10 miles per day.
- Maneuver carts or dollies safely with loads up to 200 pounds up and down stairs, elevators, through passageways or outdoors up to 75 feet/yards.
- Present a neat, clean, and well-groomed appearance in accordance with the Mohonk Mountain House Dress and Grooming Standards.
- Learn and successfully demonstrate the Mohonk Mountain House Service Steps with Service Strategies with guests and staff.
- Demonstrate knowledge and appreciation of nature and the outdoors
- Answer guest questions with accurate information and demonstrate a friendly and helpful personality by smiling, eye contact, initiating conversation and engaging with others.

QUALIFICATIONS:
- Valid Driver’s License and at least 21 years of age, or 20 years of age with at least two years of licensed driving experience.
- Experience or potential in a people-oriented job or potential for success in a people-oriented job preferred.
- Archery Certification or 5 + years of experience handling archery and or tomahawk sport equipment as well as teaching classes strongly preferred.

POSITION: Granary Sous Chef
DEPARTMENT: Kitchen

BASIC FUNCTIONS AND RESPONSIBILITIES:
Work with the Granary Chef to plan, prepare, and produce wholesome meals in accordance with company standards and local health regulations at outdoor food service locations such as the Granary, Picnic Lodge, Pavilion or as designated. Provide supervision and training for Granary Cooks. to work both inside and outside during Summer and Fall season. This position requires flexibility in shifts to cover both afternoon and evening cook outs.
ESSENTIAL JOB FUNCTIONS:
- Work with Granary Chef to oversee the food preparation, service, and operation for the outdoor dining outlet known as the “Granary”.
- Offer consistently professional, friendly and proactive service while supporting fellow colleagues.
- Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist.
- Direct and supervise Granary Cooks and monitor food preparation including quality and quantity of food.
- Demonstrate food service sanitation practices and prevention of food borne illnesses.
- Keep refrigerators and storerooms clean and neat. Ensures food and supply items are stored per standards.
- Ensure the cleanliness and maintenance of all work areas, utensils, and equipment. Work clean and be responsible for kitchen organization and orderliness.
- Demonstrate basic knife handling skills and operation of basic kitchen equipment and machines and train/supervise line cooks of same.
- Maintain proper rotation of product in all refrigerators to minimize wastage/spoilage. Maintain food and cooler logs.
- Work on prepping salads and all other associated tasks under time constraints, extreme temperatures, and high business levels.
- Learn, retain, and demonstrate a full knowledge and understanding of all associated Granary recipes as trained.
- Follow recipes, instructions from Granary Chef, and work as part of larger team unit focusing on quality and consistency
- Assist in production planning, record keeping and reporting as required.
- Grill, bake, roast, broil, and steam meats, fish, vegetables, and other foods. Check and ensure the correctness of the temperature of appliances and equipment.
- Maintain standards of prep and assist set up as directed by Granary Chef.
- Requisition food products and necessary nonfood items for daily operations of Granary.
- Inspect daily food offerings to ensure quality and food safety procedures are being followed by all cooks.
- Mentor and onboard new Granary cooks by leading and teaching daily.
- Insure proper guest service by initiating teamwork between front and back of the house.
- Assist all service staff and company workers in a professional manner insuring our guest service is in accordance with company standards.
